Proceeded to put everything back in it's place and uninstalled the game, them reinstalled. I decided to be incredibly dumb and tried to remove the mods and it still didn't work. The game started as usual but after choosing a car and a track for a practice session, Assetto Corsa was loading but then went back to the main menu.
